2½ cups warm water 1 tablespoon dry yeast 1 teaspoon sugar 4½ to 5 cups flour (the dough should be very soft and sticky) 1 teaspoon salt
Mix the dough with a spatula until everything comes together. Cover and let it rise in a warm place for 20 minutes.
After the dough has risen, fold it over itself with your hands to bring it together again. Wet or lightly oil your hands to prevent sticking.
Cover and let it rest in a warm place for 15 minutes. Fold it again, then let it rest once more. Repeat this folding process a total of 3 times, with 15 minutes of resting between each fold.
After the final fold, let the dough rest for another 15 minutes. Without folding again, transfer the dough onto a floured work surface. Cut it into 6 or 9 equal pieces. Place the pieces on a baking tray lined with parchment paper. Bake in a preheated oven at 200°C (390°F) for 25–30 minutes.
