Ingredients for the dough:

200 ml water, at room temperature

150 ml milk

10 g fresh yeast (or 5 g dry yeast)

2 teaspoons sugar

1½ teaspoons salt

2 tablespoons oil

500–600 g flour (12% protein)

For brushing:

50 g melted butter

50 g oil

Filling:

400 g cottage cheese

2 eggs

Salt, to taste

👩‍🍳 Method:

In a bowl, combine the water, milk, yeast, and sugar. Mix well until the yeast dissolves. Add the oil and salt, then gradually incorporate the flour until you get a soft, slightly non-sticky dough.

Cover the dough and let it rest for 5–10 minutes.

Divide the dough into 12–14 equal pieces. Roll each piece out with a rolling pin, brush it with the melted butter and oil mixture, and stack the sheets on a plate.

Starting with the first sheet, stretch it as thinly as possible. Fold the edges toward the center, place the filling along one edge, then roll and shape the pie as shown.

Place the pies on a baking tray lined with parchment paper. Brush them with beaten egg and bake in a preheated oven at 180°C (356°F) until beautifully golden and browned.
